The frigid temperatures have led to some struggles for local maple farmers. The temperatures have cut into a majority of the maple syrup season, as the ideal temperatures for maple syrup production is below freezing at night time and in the low 40’s during the day. If the temperatures jump too quickly, the trees will begin to bud, effectively ending the maple season and halting any further production. Generally maple syrup season ends at the beginning of April, but if the temperatures climb slowly enough the farmers may be able to extend the season. The Central New York Maple Festival is set to take place in Marathon next weekend.
