The Great New York State Fair kicks off today, but before that could happen, this year’s butter sculpture had to be unveiled.In its 49th year at the Dairy Products Building this year’s exhibit has once again been put together by Jim Victor, and his wife Marie Pelton of Pennsylvania. Previous years have featured the state’s dairy industry, the Olympics and baseball.This year’s display features New York State troopers who are celebrating their centennial.
